Gospel music is music that spreads the message of Salvation through Jesus Christ. It's written and performed in many flavors and styles.

Short answer is Note values and rhythm.

Gospel music is a gumbo of many styles. As a result, this genre of musicians are able to play blues, salsa, jazz, CCM, R&B, rock, pop, reggae, country, ect.  If you listen to your local gospel radio station, you will notice the different styles. Back in the day, if you could play blues and some hymns, you were an adequate musician.
