To answer your question . . . There are chords and modes that no one has discovered yet.
For instance, in the 50's and 60, black musicians sat at the piano and discovered sounds that no one had heard of before that are now the very basis of what we listen to and sing today.
If we were, however, to use all the chords that we know of, with all of their alterations and inversions, there would be several hundred of them.
The best thing to do is start with triads and sevenths. Gospel music has a lot of those.
