Let me ask you this: are you better at reading music or playing by ear?

I say this because a lot of people who play by reading struggle with playing by ear because there is nothing in front of them. When you play by ear, the music is in your head. The rhythm (tempo, etc.) is all up to you and how you want it to sound.
Real musicians play in every key!!!
Music Theory, da numbers work!

Here's what I would recommend:

(1)breaking up your chords...using arpeggios of the chords instead of playing the straight chord.
(2)Also your "touch" is important too......the dynamics of how soft/hard you press the keys.

Very rarely will you play all the notes of the chord at the SAME time at the SAME volume/velocity...thats just banging out chords, and it sounds like thats what you are describing as your current playing. Even if you are playing the right chords, no matter how "phat" and full they are, played like that would sound very, as you put it, "amatuerish".

Those are the two things that i've focused on in the last few years, and i've seen a night & day difference in my sound!

I have been primarily a chord and sheet reading musician with a lot of theory knowledge. I can pick out songs by ear at a very basic level. But what Im refering to is taking a set of chords and just jamming or playing something soft or random with some sense of rhythm and groove. see pianoclubhouse reply it's pretty much what Ive been doing.

This is almost exactly how I play. If someone told me to play a 2-5-1 in the key of C I would play it block chords as written in quarter notes or whole notes. No rhythm or feel. I learned piano by playing the melody with my right hand and chording with my left or playing a block chord with right hand and bass note with left and holding that chord down until the next chord change. Again not much feel, bounce or groove.
